1) Uhura in Mantrap wasn't drunk
2) Chapel in Naked Time wasn't drunk
3) Once Spock was "infected" in Naked Time he did not go running back
to Chapel. In fact, he ran from everyone and hid. The scene with him
and Kirk occurs when Kirk chases him down.

That is not unusual for either of them. You see them avoiding women in Mudd's Women, too, when they supposedly shouldn't have been able to help themselves.
I could go on. I could list example after example...oh wait, I already
did. Hundreds of times. Dozens of examples, hundreds of times.

Don't get me wrong about Spock/Uhura.
1) Uhura is lovely and 100% deserving
2) Spock and Uhura were shown in classic TOS to be fond of one another.
3) If Spock/Uhura had already been established in TOS, or in the
TOS-crew movies, I would be OK with it.

Keep in mind that the new Star Trek takes place in an alternate
universe from the original which the creative team plenty of room to
play around with the characters and storylines.

Both Spock and Uhura were mature professionals with well established Starfleet careers in the original Star Trek. In the new Trek, Spock
and Uhura are fresh out of the Academy cadets. (OK, Spock is a 'grad
student' or whatever the Starfleet equivalent is called.) So they are
at an age when people are more likely to be given to open displays of affection even if they become more reserved later in life.
2) Uhura's dream man is a handsome black man of her own species.

He's older and more heavily disciplined. The new Spock has not had the
Vulcan stick up his ass fully tightened. And given that at this point
in his life, the new Spock is still pulling away from Vulcan and its traditions, breaking off from the Vulcan seven-year cycle with a human
female is likely to appeal to him now.
Both Kirk and Spock are Starfleet officers. Professionals. The best of the best. They have a strong will and a great deal of self-discipline.
