So, is there a way to stay logged into Google without it incessantly
doing things like asking if I want to save a password? My answer will
always be no!
Alternatively is there a quick way of logging in to Google bypassing
all the stuff about do I want backups and other such. If I could log
in quickly it wouldn't be such a hassle.

If you use User Profiles, you can have the base ('owner') profile have your Google account for installing/updating apps, and then create a secondary profile in which you spend most of your time that doesn't have a Google account configured in it:

Another option is to use Aurora Store which can update apps without needing
a Google account installed on your phone - either using your account inside the app, or using one of their anonymous pool Google accounts in which case you can be Google-free:

I never got asked to save my password - and I use a Google Pixel 6a with
a Google account.

I can't remember when I opted out of those "helpful" features, but I
think one option was in "Android System Intelligence" - "Customize the experience using your Google Account data". I turned this off along with
all other options which claim to "help" or "assist" me with anything.
