We didn't have any response to this request from Pat in Buenos Aires so we thought we'd run it again :
Hi. I wonder if anybody has a foolproof recipe for Austrian kn++del, which my mother made when I was I child. I think there were two kinds: bread and potatoes. Boiled, in soup or baked, I can't remember. I have tried some recipes , but unsuccessfully. Can anybody help me? Pat, Buenos Aires.
Did we receive several responses for Julie, who was looking for a recipe for Merryfield Apple Cake. Thanks to Carol T, Dee S, Sherry and Althea for this one! Sherry and Althea both say they found it in their 1980 copies of Good Housekeeping Illustrated Cookbook.
MERRYFIELD APPLE CAKE
3 c. all-purpose flour
2 c. sugar
1 c. salad oil
1 tsp. baking soda
1 tsp. salt
2 tsp. vanilla extract
3 eggs
1 c. chopped California walnuts
1/2 c. chopped raisins
3 diced, peeled, cooking apples
Preheat oven to 325 degrees. Grease well and flour two 8-inch square cake pans.
In large bowl with mixer at low speed, mix well first 7 ingredients, constantly
scraping bowl. Beat 3 minutes more, occasionally scraping bowl. Stir in apples, nuts and raisins. Spread in pans. Bake 1 hour. Cool on wire racks. Place paper doily on each cake; sprinkle with confectioners sugar. Remove doilies.
Here's a version sent in by Clare S and Rosie:
3 cups flour
2 cups sugar
1 cup oil
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons vanilla
3 eggs, beaten
3 cups chopped apples
1 cup chopped walnuts
1/2 cup raisins
1/2 cup chopped dates (optional)
Directions
Preheat oven to 325.
Grease a 9x13 pan.
Mix flour, sugar, oil, soda, salt, vanilla and eggs.
Stir in apples, nuts, raisins and dates.
Spread in pan.
Bake 1 hour or until toothpick inserted in center comes
out clean.
